I had planned on making Walnuttos. I got the recipe from one of Joanne Fluke's books. She has some fabulous cookie recipes! I even got the dough together, before I realized it needs to chill overnight. Sigh.
So I PREPPED the cookie dough tonight, and I'll bake it tomorrow! Yay!
What did I actually bake tonight? Tamale Pie! (I forgot to take a picture)
My Love says "Tamale Pie is one of those things that you tell me you're going to make and I go 'ehh'. Then I eat it and think 'why don't we have this more often!'"
Part of the problem is that it's not very attractive. But it is very tasty! This is one of the recipes from my childhood, and I took great pleasure in making it for my mom tonight.
Tamale Pie
6 cups water
2 cups corn meal
1 can creamed corn
1 can whole olives
1 can chili
shredded cheese
chili powder
Take one cup of the water and mix the corn meal into it, so you have a paste, this will help to prevent the corn meal from clumping when you cook it. Boil the remaining 5 cups of water. Once boiling, add your corn meal paste and cook until the corn meal seems firm, about 5-10 minutes boiling. When the corn meal is done, pull off the burner and add your can of creamed corn, drained olives and chili. If you want to use chili powder to spice things up a bit, feel free to add that in now. Also put in about a cup of the shredded cheese.
Transfer your corn meal mixture into a 9x13 casserole dish and sprinkle cheese over the top. Bake at 350 for 25-30 minutes or until the top is bubbly.
Serve with Sour Cream, more olives, tomatoes, or anything else you feel like throwing on top. Enjoy!
