My family seemed to enjoy my Apple Cinnamon Scones. So much so that after breakfast this morning we seemed to be completely out! Already!
So I made two more batches today... One Apple Cinnamon for my family, and an Almond Raspberry for me.

Apple Cinnamon Scones - by Heather
2 cups flour
5 tbsp brown sugar divided
1 tbsp baking powder
2 tsp cinnamon
1/2 tsp salt
1/4 tsp nutmeg
6 tbsp cold butter
1 cup heavy cream
1/4 tsp vanilla
1 apple, peeled, cored and cut into small pieces
1/4 cup powdered sugar
1 1/2 tbsp heavy cream
1/4 tsp vanilla
Preheat oven to 400. Place 2 tbsp of brown sugar and apple pieces in a plastic baggie and shake to coat apples.
In a large bowl combine flour, 3 tbsp brown sugar, baking powder, cinnamon, salt and nutmeg. Stir together.
Cut in butter until mixture resembles coarse meal. There will probably be a few larger butter pieces as well.
Pour in heavy cream and vanilla. Gently stir together with spatula. Do not over stir.
Fold in Apple pieces.
Place dough on floured surface and form circle approx 1 1/2 inches deep. Cut into 8 wedges.
Place on silicone baking mat or parchment paper lined cookie sheet and bake for 15-18 mins.
While scones are baking combine powdered sugar, heavy cream and vanilla to make a thick glaze. Once scones have cooled drizzle glaze over top.
